WINNER! Best African Food Culture Book in the World Gourmand World Cookbook Awards 2025 Award-Winning Moroccan Cookbook

Unveiling the Flavours: My Secret to Moroccan Cuisine is Chef Maaref’s award-winning Moroccan cookbook, celebrating authentic Moroccan gastronomy, heritage and culinary tradition. Combining traditional recipes, personal stories and professional techniques, the book explores the flavours, culture and culinary identity that have made Moroccan cuisine one of the world’s great food traditions. In 2025, Unveiling the Flavours was named Best African Food Culture Book in the World at the Gourmand World Cookbook Awards. More than a cookbook, it is part of Chef Maaref’s wider mission to preserve, champion and share authentic Moroccan culinary heritage internationally.

WHY THIS BOOK MATTERS

Moroccan cuisine is more than a collection of recipes. It is a living heritage shaped over centuries by regions, communities, families and traditions. Unveiling the Flavours was created not only to celebrate that heritage, but to help preserve it from misleading interpretations, mislabelling and the gradual loss of its cultural identity. Across North Africa and the Mediterranean, culinary traditions naturally cross borders and share influences. But shared history should not erase origin. Through recipes, personal memories and professional culinary knowledge, Chef Maaref seeks to distinguish, document and celebrate the dishes, techniques and traditions that form part of Morocco’s distinctive gastronomic heritage. The book brings together the Morocco Chef Maaref grew up with and the experience gained throughout his international culinary career. Its purpose is not to create division, but to give Moroccan cuisine its proper context, protect its authenticity and strengthen its recognition internationally. With a foreword by former UK Government Minister The Rt Hon Steve Baker, the book also explores food as something greater than what appears on the plate — a connection between heritage, identity, culture and nations.
