Chef Maaref is an Executive Chef, Culinary Director, author, educator and speaker with more than 25 years of experience in professional kitchens and hospitality. His career has developed across different roles, cultures and working environments, giving him a broad view of food, people and the hospitality industry. Over the years, he has led kitchen teams, developed menus, supported culinary projects and worked with chefs at different stages of their careers. He has also been involved in education, consultancy, events and international collaborations. Each experience has helped shape the way he approaches food and leadership today. His Moroccan heritage remains an important part of his story, alongside his European culinary training and many years of professional experience in Britain. However, he does not define his work through one cuisine or one style of cooking. Instead, he draws inspiration from different cultures, techniques and traditions. Writing has also become an important part of his work. His cookbook, Unveiling the Flavours: My Secret to Moroccan Cuisine, was created to share knowledge, preserve culinary heritage and tell the stories behind the food. The book later received international recognition at the Gourmand World Cookbook Awards. Chef Maaref is also involved in food writing, judging, mentoring and culinary education. These roles give him the opportunity to keep learning, exchange ideas and contribute to the wider food community. Today, his work continues across kitchens, consultancy, writing, education, judging and creative projects. Above all, he believes that food should bring people together, encourage curiosity and create meaningful connections between cultures and generations.
